Prepare the Chicken
Season the chicken breasts with salt and black pepper. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 5-7 minutes on each side, or until cooked through and golden brown. Remove from the skillet and set aside.

Sauté the Vegetables
In the same skillet, add the remaining olive oil. Add the minced garlic and sauté for 1 minute until fragrant. Then, add the sliced zucchini, mushrooms, and artichoke hearts. Cook for about 5-6 minutes, stirring occasionally, until the vegetables are tender.

Make the Sauce
Pour in the white wine and add the fresh sage leaves. Bring to a simmer and let it cook for 3-4 minutes, allowing the alcohol to cook off and the flavors to meld.

Combine and Serve
Return the cooked chicken breasts to the skillet, spooning the sauce and vegetables over them. Allow to cook for an additional 2-3 minutes to heat through. Serve hot, garnished with additional sage if desired.
