Cooking Instructions
- 1
Prepare the Ingredients
Rinse the shrimp under cold water and pat dry. Clean and slice the mushrooms, and halve the cherry tomatoes. Mince the garlic and chop the basil.
- 2
Sauté the Mushrooms
In a large skillet, heat olive oil over medium heat. Add the sliced mushrooms and sauté until they are tender and lightly browned, about 5 minutes.

- 4
Deglaze with White Wine
Pour in the white wine and scrape up any browned bits from the pan. Let it simmer for about 3 minutes to reduce slightly.
- 5
Add Tomatoes and Season
Stir in the halved cherry tomatoes, salt, black pepper, and lemon juice. Cook for another 2-3 minutes until the tomatoes are just softened.
- 6
Finish with Basil
Remove the skillet from heat and stir in the fresh basil. Adjust seasoning if needed.
- 7
Serve
Serve the Scampi Caprese hot, garnished with additional basil if desired. It pairs well with crusty bread or over pasta.
