    Preparing the Mushrooms

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the wild mushrooms and sauté until they are tender and golden brown, about 5-7 minutes. Set aside.

    Sautéing the Base

    In a large saucepan, heat the remaining tablespoon of olive oil over medium heat. Add the chopped onion and cook until translucent, about 3-4 minutes. Stir in the minced garlic and cook for another minute.

    Cooking the Rice

    Add the Arborio rice to the saucepan and stir for about 2 minutes until the rice is well-coated and slightly toasted. Pour in the white wine and cook, stirring constantly, until the wine is mostly absorbed.

    Adding Broth Gradually

    Begin adding the vegetable broth, one ladle at a time, stirring frequently. Allow the rice to absorb most of the liquid before adding the next ladle. Continue this process for about 18-20 minutes, or until the rice is al dente and creamy.

    Finishing the Risotto

    Stir in the sautéed mushrooms, grated Parmesan cheese, salt, and black pepper. Mix well until the cheese is melted and everything is combined. Remove from heat.

    Serve the risotto hot, garnished with fresh parsley and extra Parmesan cheese if desired.
