    Prepare the Ingredients

    Begin by slicing the mushrooms and bell peppers, dicing the tomatoes, and mincing the garlic. Set aside.

    Cook the Chicken

    In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Season the chicken breasts with salt and black pepper, then add to the skillet. Cook for about 5-7 minutes on each side, or until cooked through and golden brown. Remove from the skillet and set aside.

    Sauté the Vegetables

    In the same skillet, add the remaining olive oil. Add the minced garlic and sauté for about 30 seconds until fragrant. Then add the sliced mushrooms and bell peppers. Cook for about 5 minutes until the vegetables are tender.

    Add Tomatoes and Seasoning

    Stir in the diced tomatoes and dried oregano, cooking for an additional 3-4 minutes until the tomatoes are softened. Adjust seasoning if necessary.

    Return the cooked chicken breasts to the skillet and spoon the vegetable mixture over the top. Cook for another 2 minutes to heat through. Garnish with chopped parsley before serving.
