Prepare the Veal
Season the veal shanks with salt and pepper. In a large Dutch oven, heat the olive oil over medium-high heat. Sear the veal shanks on all sides until browned, about 5-7 minutes per side. Remove and set aside.

Deglaze the Pot
Stir in the tomato paste and cook for 1-2 minutes. Pour in the white wine, scraping up any browned bits from the bottom of the pot. Let it simmer for about 5 minutes.

Braise the Ossobuco
Return the veal shanks to the pot. Add the beef broth, bay leaves, and thyme. Bring to a simmer, cover, and reduce heat to low. Cook for about 2-2.5 hours until the meat is tender.

Serve
Remove the ossobuco from the pot and let rest for a few minutes. Serve hot, garnished with gremolata if desired, alongside saffron risotto.
