Preparation and Cooking

    Make the Fettuccine

    In a large mixing bowl, combine the flour and salt. Create a well in the center and add the eggs. Gradually mix the flour into the eggs until a dough forms. Knead the dough on a floured surface for about 10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for 30 minutes.

    Prepare the Bolognese Sauce

    In a large skillet, heat olive oil over medium heat. Add the chopped onion, carrot, and celery. Sauté until softened, about 5-7 minutes. Add the minced garlic and cook for another minute.

    Cook the Meat

    Add the ground beef and pork to the skillet. Cook until browned, breaking it up with a spoon, about 8-10 minutes. Drain excess fat if necessary.

    Add Liquids

    Pour in the red wine and let it simmer until mostly evaporated, about 5 minutes. Stir in the crushed tomatoes, milk, bay leaf, and season with salt and pepper. Bring to a simmer and reduce heat to low. Cook uncovered for at least 30 minutes, stirring occasionally.

    Roll Out the Fettuccine

    After resting, divide the dough into four pieces. Roll each piece out into thin sheets using a pasta machine or a rolling pin. Cut into fettuccine strips.

    Cook the Fettuccine

    Bring a large pot of salted water to a boil. Add the fettuccine and cook for 2-3 minutes until al dente. Drain and toss with a bit of olive oil.

    Serve

    Serve the hot fettuccine topped with the Bolognese sauce and sprinkle with grated Parmesan cheese.
