Cake and Mousse
Method
Preparation
- 1
Prepare the Cake
Preheat your oven to 175°C (350°F). Grease and flour a round cake pan.
- 2
Melt Chocolate and Butter
In a heatproof bowl over simmering water, melt the dark chocolate and unsalted butter together. Stir until smooth, then remove from heat.
- 3
Mix Sugar and Eggs
In a separate bowl, whisk together the granulated sugar and eggs until pale and fluffy.
- 4
Combine Ingredients
Slowly pour the melted chocolate mixture into the egg mixture, stirring constantly. Fold in the flour and a pinch of salt until just combined.
- 5
Bake the Cake
Pour the batter into the prepared cake pan and bake for 25-30 minutes, until a toothpick inserted comes out clean. Allow to cool completely.
- 6
Make the Mousse
In another bowl, whip the heavy cream with the vanilla extract and powdered sugar until soft peaks form.
- 7
Combine Mousse and Cake
Once the cake is cool, gently fold the whipped cream into the remaining melted chocolate until well combined. Spread the mousse over the cooled cake.
- 8
Chill and Serve
Refrigerate the cake for at least 2 hours before serving. Garnish with chocolate shavings or fresh berries if desired.
