Make the Pastry
In a large bowl, mix the flour, sugar, and salt. Add the chilled butter and mix until the mixture resembles coarse crumbs. Stir in ice water, a tablespoon at a time, until the dough comes together. Form into a disk, wrap in plastic, and refrigerate for at least 30 minutes.

Prepare the Filling
In a mixing bowl, combine ricotta cheese, egg, and vanilla extract. Mix until smooth and creamy.

Prepare the Apples
In another bowl, toss the sliced apples with lemon juice, brown sugar, and cinnamon. Set aside.

Assemble the Tart
Preheat the oven to 375°F (190°C). Roll out the chilled pastry dough on a floured surface and fit it into a tart pan. Spread the ricotta mixture evenly over the bottom of the tart crust. Arrange the apple mixture on top of the ricotta.

Bake the Tart
Bake in the preheated oven for 35-40 minutes or until the apples are tender and the crust is golden brown. Allow to cool slightly before serving.
