    Sear the Filet

    Heat olive oil in a skillet over medium-high heat. Season the filet of beef with salt and black pepper. Sear the filet for about 4-5 minutes on each side until it reaches your desired level of doneness. Remove from skillet and let it rest.

    Prepare the Sauce

    In the same skillet, reduce heat to medium and add the butter. Once melted, add the shallots and cook until softened, about 2-3 minutes. Add the Madeira wine and scrape the bottom of the skillet to deglaze. Bring to a boil and reduce by half.

    Add Broth and Season

    Add the beef broth and fresh thyme to the skillet. Continue to simmer until the sauce thickens slightly, about 5-7 minutes. Adjust seasoning with salt and pepper to taste.

    Plate the Dish

    Slice the rested filet and place it on a plate. Spoon the Madeira sauce over the filet and add dollops of paté on the side or atop the filet as desired.
