Pork Saltimbocca

Preparation and Cooking

    Prepare the Pork

    Pound the pork loin pieces to about 1/2 inch thickness. Season with salt and pepper. Place 2 slices of prosciutto on each piece of pork, followed by a slice of fontina cheese and 3 sage leaves. Fold the pork over to enclose the filling.

    Bread the Pork

    Set up a breading station with flour, beaten egg, and bread crumbs. Dredge each pork piece in flour, dip in egg, and coat with bread crumbs.

    Cook the Pork

    In a large skillet, heat olive oil over medium heat. Cook the breaded pork for about 4-5 minutes on each side or until golden brown and cooked through. Remove and keep warm.

    Make the Garlic Butter

    In the same skillet, add butter and minced garlic. Sauté until fragrant.

    Prepare the Mashed Potatoes

    Boil the Yukon Gold potatoes until tender. Drain and mash with white cheddar cheese, salt, and pepper to taste.

    Cook the Vegetables

    In a separate pot, steam the seasonal vegetables until tender-crisp. Toss with a little garlic butter before serving.
