Prepare the Sriracha Crema

In a small bowl, mix together the sour cream and sriracha sauce until well combined. Set aside.

Prepare the Scallops

Pat the scallops dry with paper towels and season with salt and black pepper.

Coat the Scallops

On a plate, spread the grated Parmesan cheese. Press each scallop into the cheese, coating one side evenly.

Cook the Chorizo

In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced chorizo and cook until crispy, about 5 minutes. Remove and set aside.

Sear the Scallops

In the same skillet, add the remaining tablespoon of olive oil. Place the scallops cheese-side down in the skillet and sear for about 2-3 minutes until golden brown. Flip and cook for another 1-2 minutes until cooked through.

Assemble the Dish

On plates, layer the grilled sweet corn, fava beans, and crispy chorizo. Top with the Parmesan crusted scallops and drizzle with sriracha crema.
