Preparation and Assembly
Prepare the Pork
In a large bowl, combine orange juice, lime juice, olive oil, cumin, oregano, salt, black pepper, and minced garlic. Mix well to create the marinade. Place the pork shoulder in a large resealable bag and pour the marinade over the pork, ensuring it's well coated. Seal the bag and refrigerate for at least 4 hours, preferably overnight.
Slow Roast the Pork
Preheat the oven to 300°F (150°C). Place the marinated pork shoulder in a roasting pan and cover with aluminum foil. Roast in the preheated oven for about 4-5 hours, or until the meat is tender and easily pulled apart with a fork. Remove from the oven and let it rest for 30 minutes before shredding.
Prepare Mojo Mayo
In a small bowl, combine mayonnaise, garlic powder, and Dijon mustard. Mix well and set aside.
Assemble the Sandwiches
Slice the sub rolls in half. Spread a generous amount of mojo mayo on each side. Layer shredded pulled pork, slices of ham, provolone cheese, and pickles. Close the sandwich and serve immediately, or grill the sandwich on a panini press until the cheese melts.
