    Prepare the Sausage Mixture

    In a large mixing bowl, combine the elk meat, pork fatback, chopped jalapeños, minced garlic, smoked paprika, cumin, salt, and black pepper. Mix well until all ingredients are evenly combined.

    Stuff the Sausages

    Using a sausage stuffer, fill sausage casings with the meat mixture. Tie off the ends securely. If using without casings, form into patties.

    Cook the Sausages

    Preheat a grill or skillet over medium heat. Cook the sausages for about 10-12 minutes, turning occasionally until fully cooked and browned on all sides.

    Prepare the Flatbread

    Brush the flatbreads with olive oil and grill them for about 2-3 minutes on each side until lightly charred.

    Spread pub cheese on each grilled flatbread, top with arugula, and add the jalapeño elk sausages. Drizzle with piquillo jam before serving.
