    Prepare the Steak

    Take the filet mignon out of the refrigerator and let them sit at room temperature for about 30 minutes. Preheat your oven to 400°F (200°C).

    Season the Steak

    Rub the filet mignon with olive oil, and generously season both sides with salt and black pepper.

    Sear the Filets

    In an oven-safe skillet, heat a tablespoon of olive oil over medium-high heat. Once hot, add the filets and sear for about 3-4 minutes on each side until browned.

    Add Aromatics

    Add garlic cloves and fresh thyme sprigs to the skillet. Spoon some of the melted fat over the filets for added flavor.

    Finish in the Oven

    Transfer the skillet to the preheated oven and cook for an additional 5-7 minutes for medium-rare, or until they reach your desired doneness.

    Make the Sauce

    Remove the filets from the skillet and let them rest. In the same skillet, pour in red wine and beef broth, scraping the bottom to deglaze. Let it simmer for about 5 minutes until slightly thickened.

    Slice the filet, drizzle the red wine sauce over, and serve immediately.
