Prepare the Pork Belly
Preheat your oven to 300°F (150°C). Score the skin of the pork belly in a crosshatch pattern and season generously with salt and black pepper.

Braise the Pork Belly
In a large oven-safe pot, heat olive oil over medium heat. Add the pork belly, skin side down, and sear until golden brown, about 5-7 minutes. Flip the pork belly, add garlic and thyme, and then cover with a lid. Place the pot in the preheated oven and braise for 2-2.5 hours, or until the pork is tender.

Glaze the Pork
Once the pork is tender, remove it from the oven and increase the oven temperature to 425°F (220°C). Brush the pork belly with maple syrup and return it to the oven for an additional 15-20 minutes to crisp up the skin.

Serve
Remove the pork belly from the oven and let it rest for a few minutes. Slice into pieces and serve alongside the caramelized Brussels sprouts. Drizzle with balsamic vinegar and top with crumbled chèvre cheese.
