Ingredients for Veggie Greek Salad

Method

Instructions

  1. 1

    Prepare the Tzatziki

In a bowl, combine the Greek yogurt, minced garlic, finely chopped cucumber (squeeze out excess water), and a pinch of salt. Mix well and refrigerate for at least 30 minutes to let the flavors meld.

  2. 2

    Marinate the Vegetables

In a separate bowl, combine the chopped tomatoes, sliced red onion, Kalamata olives, and sliced pepperoncini. Drizzle with olive oil, red wine vinegar, dried oregano, salt, and black pepper. Toss to combine and let it sit for 15-20 minutes.

  3. 3

    Assemble the Salad

In a large serving bowl, layer the marinated vegetable mixture. Crumble feta cheese on top and drizzle with any remaining marinade. Serve alongside the tzatziki.
