Preparation Steps

  1. 1

    Marinate the Portobello Mushrooms

In a bowl, whisk together olive oil, balsamic vinegar, minced garlic, salt, and black pepper. Add the portobello caps and coat them well. Let marinate for at least 30 minutes.

  2. 2

    Grill the Vegetables

Preheat the grill or a grill pan over medium-high heat. Add the sliced bell peppers and onions. Grill for about 5-7 minutes until they are softened and slightly charred. Remove and set aside.

  3. 3

    Grill the Portobello Mushrooms

Place the marinated portobello caps on the grill. Cook for about 5-6 minutes on each side until they are tender and have grill marks.

  4. 4

    Assemble the Sandwich

Slice the ciabatta rolls in half. Place a grilled portobello cap on each roll, top with grilled peppers and onions, and a slice of provolone cheese. You can melt the cheese slightly by placing the sandwiches back on the grill for a minute.

  5. 5

    Serve

Serve the grilled portobello sandwiches warm with your favorite condiments or sides.
