Method

Preparing the Shrimp

    Prepare the Batter

    In a mixing bowl, combine the all-purpose flour, cornstarch, salt, and black pepper. Mix well.

    Prepare the Egg Mixture

    In a separate bowl, whisk together the egg and water until fully combined.

    Coat the Shrimp

    Dip each shrimp into the egg mixture and then coat them with the flour mixture. Ensure they are evenly coated.

    Heat the Oil

    In a deep frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Shrimp

    Carefully add the coated shrimp to the hot oil in batches. Fry for about 2-3 minutes per side or until golden brown and crispy. Remove and drain on paper towels.

Making the Yucatan Sauce

    Blend the Ingredients

    In a blender, combine the chopped tomatillos, minced garlic, chopped jalapeño, cilantro, lime juice, olive oil, and salt.

    Puree the Sauce

    Blend until smooth and adjust seasoning if necessary. You can add a bit of water if the sauce is too thick.

    Serve the Sauce

    Transfer the sauce to a serving bowl and set aside to serve with the crispy shrimp.
