Method

Marinating the Steak

    Prepare the Marinade

    In a blender or food processor, combine parsley, cilantro, garlic cloves, red wine vinegar, olive oil, red pepper flakes, salt, and black pepper. Blend until smooth.

    Marinate the Steak

    Place the flank steak in a resealable plastic bag or shallow dish. Pour the chimichurri marinade over the steak, ensuring it is well-coated. Seal the bag or cover the dish, and refrigerate for at least 1 hour, preferably overnight.

Cooking the Steak and Preparing Salad

    Cook the Steak

    Preheat a grill or grill pan over medium-high heat. Remove the steak from the marinade and discard the marinade. Grill the steak for about 5-7 minutes on each side for medium-rare, or until desired doneness is reached. Remove from heat and let it rest for 10 minutes before slicing.

    Prepare the Asparagus and Onions

    While the steak is resting, snap off the tough ends of the asparagus and slice the red onion into thin rings. Toss the asparagus with a little olive oil, salt, and pepper and grill for about 3-5 minutes until tender. Grill the red onion rings until slightly charred.

    Assemble the Salad

    In a large bowl, combine mixed greens, sliced steak (cut against the grain), grilled asparagus, and grilled red onions. Slice the avocado and add it on top along with the bleu cheese crumbles.

Serving

    Dress the Salad

    Drizzle additional chimichurri vinaigrette over the salad, if desired. Serve immediately.
