Preparation of Shrimp

Cook the Shrimp
In a pot of boiling water, add the fresh shrimp and cook for about 2-3 minutes until they turn pink and opaque. Drain and transfer to an ice bath to stop the cooking process. Once cooled, chop the shrimp into bite-sized pieces.

Mix Citrus Marinade
In a large bowl, combine the fresh lime juice and fresh orange juice. Stir well to make the citrus marinade.

Add Vegetables and Seasoning
To the bowl with the citrus marinade, add the diced cucumber, diced tomato, chopped red onion, finely chopped jalapeno, and chopped cilantro. Mix well to combine.

Add Cooked Shrimp
Gently fold in the cooked shrimp into the mixture. Ensure that the shrimp are evenly coated with the marinade and vegetable mixture.

Add salt and black pepper to taste. Mix well and adjust seasoning if necessary.
