Prepare the Rice Noodles

Cook the Noodles
Bring 4 cups of water to a boil in a pot. Add 4 oz of rice noodles and cook according to package instructions, usually about 5-7 minutes, until tender. Drain the noodles and rinse under cold water to stop the cooking process. Set aside.

Sear the Tuna
Heat a non-stick skillet over high heat. Once hot, add the seasoned tuna steak. Sear each side for about 1-2 minutes for rare, ensuring a nice golden crust forms. Remove from heat and let rest for a few minutes before slicing.

Add Sesame Seeds
While the tuna is still warm, sprinkle sesame seeds over the top of the seared tuna, pressing lightly to adhere.
Assemble the Dish

Plate the Noodles
Divide the chilled rice noodles among plates, creating a nest in the center.

Add Tuna Slices
Thinly slice the seared tuna and arrange the slices atop the rice noodles.

Chop the cilantro and sprinkle over the tuna and noodles. Squeeze fresh lime juice over the top and drizzle with soy sauce before serving.
