Caramelized Onion and Smoked Bacon Dressing

Salad Preparation

    Prepare the Spinach

    Rinse the fresh spinach under cold water and pat dry with paper towels. Place it in a large salad bowl.

    Prepare the Grape Tomatoes

    Cut the grape tomatoes in half and add them to the bowl with the spinach.

    Prepare the Granny Smith Apple

    Core and slice the Granny Smith apple into thin wedges. Add to the salad bowl.

    Add Bleu Cheese and Pecans

    Sprinkle the bleu cheese crumbles and spiced pecans over the salad base.

Dressing Preparation

    Cook the Bacon

    In a skillet over medium heat, cook the smoked bacon until crispy. Remove the bacon and let it cool on paper towels, then crumble into small pieces.

    Caramelize the Onion

    In the same skillet, add the sliced onion and cook in the bacon drippings over low heat until soft and caramelized, about 15-20 minutes.

    Make the Dressing

    In a small bowl, whisk together the olive oil, apple cider vinegar, honey, salt, and black pepper. Add the caramelized onions and crumbled bacon, and mix well.

Assembly
