Caramelize the Onions and Sauté the Vegetables
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onions and a pinch of salt. Cook, stirring occasionally, until the onions are soft and golden brown, about 10-15 minutes.

Cook the Shaved Ribeye
Push the vegetable mixture to one side of the skillet, and add the shaved ribeye to the other side. Cook the meat for about 3-5 minutes until just browned, then mix the vegetables with the meat to combine.

Melt the Cheese
Layer the Swiss cheese over the ribeye and vegetable mixture. Cover the skillet with a lid to help the cheese melt for about 2-3 minutes.
