    Slice Vegetables

    Thinly slice the onions, bell pepper, and mushrooms.

    Season Beef

    Season the shaved beef with salt and black pepper.

Cooking

    Caramelize Onions

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and cook for about 10-15 minutes until they are golden brown and caramelized, stirring occasionally.

    Cook Peppers and Mushrooms

    Add the sliced bell pepper and mushrooms to the skillet with the caramelized onions. Cook for an additional 5-7 minutes until the vegetables are tender.

    Cook Shaved Beef

    Push the vegetables to the side of the skillet and add the remaining tablespoon of olive oil. Increase the heat to medium-high and add the seasoned shaved beef. Cook for about 3-5 minutes, stirring until the beef is browned and cooked through.

    Melt the Cheese

    Reduce the heat to low and lay the Swiss cheese over the beef and vegetables. Cover the skillet to allow the cheese to melt, about 2-3 minutes.

    Prepare Hoagie Rolls

    While the cheese is melting, slice the hoagie rolls lengthwise without cutting all the way through.

    Fill the Rolls

    Once the cheese is melted, divide the beef and vegetable mixture among the hoagie rolls, and serve immediately.
