Method

Roast the Half-Chicken

    Preheat the Oven

    Preheat your oven to 375°F (190°C).

    Prepare the Chicken

    In a small bowl, mix olive oil, minced garlic, paprika, cumin, salt, black pepper, and lemon juice. Rub this mixture all over the chicken halves, ensuring it's well-coated.

    Roast the Chicken

    Place the seasoned chicken halves in a roasting pan, skin side up. Roast in the preheated oven for about 1 hour or until the internal temperature reaches 165°F (75°C).

Prepare the Potato Hash

    Cook the Chorizo

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced chorizo and cook until it's browned, about 5-7 minutes. Remove and set aside.

    Sauté Vegetables

    In the same skillet, add diced onions and cook until translucent. Then, add diced potatoes and Amazon peppers. Season with salt and pepper. Cook for 15-20 minutes or until potatoes are tender and golden, stirring occasionally.

    Combine Ingredients

    Add the cooked chorizo back into the skillet and mix until well combined. Cook for an additional 5 minutes.

Make the Chimichurri Sauce

    In a bowl, mix together chopped parsley, minced garlic, red wine vinegar, olive oil, red pepper flakes, salt, and black pepper until well blended.

Steam the French Green Beans

    Steam the Beans

    Bring a pot of water to a boil and place the trimmed French green beans in a steamer basket over the boiling water. Steam for about 5-7 minutes until tender but still bright green.

    Drizzle with olive oil and sprinkle with salt to taste before serving.

Roast the Corn

    Prepare the Corn

    Preheat a grill or oven to medium-high heat. Brush the corn with olive oil and sprinkle with salt.

    Place the corn on the grill or in the oven and roast for about 10-15 minutes, turning occasionally until charred and tender.
