Penne With Shrimp Recipe
Sautéed deep water 'lobster shrimp,' penne pasta, Roma tomatoes, fresh basil, garlic and avocados tossed with a citrus cream sauce and shredded pecorino cheese.

Cooking the Pasta

Boil the Penne
Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.
Preparing the Sauce and Shrimp

Sauté the Shrimp
In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Add the lobster shrimp and cook for 2-3 minutes until they turn pink and opaque.

Add Tomatoes
Chop the Roma tomatoes and add them to the skillet. Sauté for an additional 2 minutes until the tomatoes soften.

Make the Cream Sauce
Pour in the heavy cream and lemon juice. Stir in salt and black pepper. Allow the sauce to simmer for 3-4 minutes until slightly thickened.
Combining Ingredients

Combine Pasta and Sauce
Add the cooked penne pasta to the skillet, tossing to coat the pasta in the cream sauce. Stir in the chopped fresh basil.

Serve with Avocado
Slice the avocado and serve on top of the pasta. Sprinkle shredded pecorino cheese on top before serving.
