Crust Preparation

Make the crust
In a medium bowl, combine graham cracker crumbs and granulated sugar. Pour in melted butter and mix until crumbs are evenly coated. Press the mixture firmly into the bottom and up the sides of a 9-inch pie dish.

Bake the crust
Preheat your oven to 350°F (175°C). Bake the crust for about 8-10 minutes until golden brown. Remove from the oven and let it cool while you prepare the filling.

Mix the filling
In a large bowl, whisk together the egg yolks until they are light and frothy. Gradually add the sweetened condensed milk, key lime juice, and lime zest. Continue whisking until smooth and well combined.

Fill the crust
Pour the filling mixture into the cooled graham cracker crust, spreading it evenly.

Bake the pie
Bake the pie in the preheated oven for 10-15 minutes, until the filling is set but still slightly jiggly in the center. Remove from the oven and let cool at room temperature, then refrigerate for at least 3 hours to fully set.

In a mixing bowl, combine heavy whipping cream and powdered sugar. Using a hand mixer or stand mixer, whip the cream until stiff peaks form.
