Method

Rib Eye Preparation

    Prepare the Rib Eye

    Rub each rib eye steak with olive oil and generously apply dry rub seasoning on both sides. Let it sit for at least 30 minutes to marinate.

    Cook the Rib Eye

    Preheat a grill or pan over medium-high heat. Cook the rib eye for about 4-5 minutes per side for medium-rare, or to your desired doneness. Let it rest for 5 minutes before serving.

Roasted Garlic and Pecorino Smashed Potatoes

    Prepare the Potatoes

    Peel and chop potatoes into quarters. Boil in salted water until tender, about 15-20 minutes.

    Roast the Garlic

    While potatoes are boiling, cut the top off the head of garlic, drizzle with olive oil, wrap in foil, and roast in the oven at 400°F (200°C) for about 30-35 minutes.

    Mash the Potatoes

    Drain the potatoes, then add butter, milk, roasted garlic, and pecorino cheese. Mash until creamy and season with salt and pepper to taste.

Caramelized Mushrooms & Asparagus

    Prepare the Vegetables

    Clean mushrooms and trim asparagus. Heat olive oil in a pan over medium heat.

    Cook the Mushrooms

    Add mushrooms to the pan and sauté for about 5-7 minutes until caramelized. Season with salt and pepper.

    Cook the Asparagus

    Add asparagus to the pan and cook for an additional 5-7 minutes until tender-crisp. Season with salt and pepper.

Roasted Blue Cheese Tomato

    Prepare the Tomatoes

    Preheat the oven to 375°F (190°C). Cut tomatoes in half and place them on a baking sheet.

    Add Cheese and Roast

    Top each tomato half with blue cheese, drizzle with olive oil, and season with salt and pepper. Roast for about 20 minutes until cheese is melted and tomatoes are tender.

Caramelized Onion Demi Sauce

    Caramelize the Onions

    Thinly slice onions and sauté in butter over low heat for about 20 minutes until golden and caramelized.

    Make the Demi Sauce

    Add beef broth and red wine to the pan, bring to a simmer, and reduce by half. Season with salt and pepper to taste.
