Prepare the Ingredients
Wash the fresh conch meat and chop it into bite-sized pieces. Dice the onion and mince the garlic cloves. Chop the fresh thyme and parsley.

Add Tomatoes and Broth
Stir in the diced tomatoes and cook for another 5 minutes. Then, add the chicken or seafood broth and bring the mixture to a simmer.

Add Conch and Seasonings
Add the chopped conch meat to the pot, along with salt, black pepper, cayenne pepper, fresh thyme, and half of the chopped parsley. Simmer for about 15-20 minutes until the conch is tender.

Finish the Chowder
Crumble the cooked bacon and stir it back into the chowder. Adjust seasoning to taste and garnish with the remaining parsley before serving.
