Preparation of Jerk Chicken

Marinate the Chicken
In a bowl, combine the chicken breast with jerk seasoning and olive oil. Make sure the chicken is well-coated with the seasoning. Marinate for at least 30 minutes, or up to 2 hours in the refrigerator for more flavor.

Mix the Slaw
In a large bowl, combine shredded cabbage, chopped cilantro, lime juice, and salt. Toss well to ensure all the ingredients are mixed and the cabbage is coated with lime juice.
Assembly of Tostados

Prepare the Tortillas
Preheat your oven to 400°F (200°C). Place the corn tortillas on a baking sheet and bake for about 5-7 minutes, until they are slightly crispy.

Assemble the Tostados
Layer each baked tortilla with a generous scoop of the Cuban black beans, followed by the jerk chicken strips, and top with Monterey Jack cheese.

Melt the Cheese
Return the assembled tostados to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.

Serve with Slaw
Remove from the oven and top each tostado with the lime cilantro cabbage slaw. Serve immediately and enjoy!
