Achiote Redfish Bowl Recipe

Method

Marinating the Redfish

    Prepare the Marinade

    In a bowl, mix together the achiote paste, olive oil, lime juice, minced garlic, chopped cilantro, salt, and black pepper until well combined.

    Marinate the Redfish

    Place the redfish fillets in a shallow dish and pour the marinade over them. Cover and refrigerate for at least 30 minutes.

Cooking the Black Beans

    Sauté the Onion and Garlic

    In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.

    Cook the Beans

    Add the canned black beans (drained and rinsed), cumin, salt, and black pepper to the saucepan. Stir to combine and simmer for about 10 minutes until heated through.

Preparing the Yellow Rice

    Cook the Rice

    In a medium saucepan, combine the long-grain rice, chicken broth, turmeric, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until the rice is cooked and liquid has absorbed.

Frying the Plantains

    Prepare and Fry Plantains

    Peel the ripe plantains and slice them diagonally into 1-inch thick pieces. In a skillet, heat 2 tablespoons of olive oil over medium heat. Fry the plantain slices until golden brown on both sides, about 3-4 minutes per side. Remove and drain on paper towels.

Making Pico de Gallo

    Combine Ingredients

    In a bowl, combine the diced tomatoes, finely chopped onion, chopped cilantro, lime juice, and salt. Mix well and set aside.

Grilling the Redfish

    Char Grill the Marinated Redfish

    Preheat the grill to medium-high heat. Remove the redfish from the marinade and grill for about 4-5 minutes per side until cooked through and grill marks appear.

Assembling the Bowl

    Serve the Dish

    In a bowl, layer the yellow rice, black beans, grilled redfish, and top with fried plantains and pico de gallo. Enjoy your Achiote Redfish Bowl!
