    Prepare Quinoa

    Rinse 1 cup of quinoa under cold water. In a saucepan, combine the rinsed quinoa with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is cooked and water is absorbed. Fluff with a fork and set aside to cool.

    Mix Ingredients

    In a large mixing bowl, combine the cooked quinoa, rinsed black beans, diced red onion, shredded Monterey Jack cheese, chopped kale, minced garlic, cumin, salt, and black pepper. Mix well until all ingredients are combined.

    Form Patties

    Using your hands, form the mixture into 4 equal-sized patties. Make sure they are compact to hold together during cooking.

    Cook Patties

    Heat 2 tablespoons of olive oil in a large skillet over medium heat. Once hot, add the patties and cook for about 5-6 minutes on each side or until golden brown and heated through.

    Assemble Burgers

    Toast the burger buns if desired. Place each patty on a bun, drizzle with teriyaki glaze to taste, and top with additional kale slaw and red onion slices.

    Serve the veggie burgers warm with your choice of sides. Enjoy!
