    Prepare the Caramelized Onions

    Slice the yellow onion into thin rounds. Heat 1 tablespoon of vegetable oil in a skillet over medium heat. Add the sliced onions and a pinch of salt. Cook the onions, stirring frequently, for about 15-20 minutes until they are soft and caramelized. Remove from heat and set aside.

    Form the Patties

    Divide the ground beef into 2 equal portions (about 8 ounces each). Form each portion into a loose ball without overworking the meat. Season each ball with salt and black pepper.

    Cook the Patties

    In the same skillet, add 1 tablespoon of vegetable oil and increase the heat to high. Once the oil is shimmering, add the beef balls. Using a spatula, smash each ball down into a flat patty. Cook for about 2-3 minutes until a crust forms on the bottom.

    Add Cheese

    Flip the patties and immediately place a slice of American cheese on top of each patty. Continue cooking for another 2 minutes until the cheese is melted and the patties are cooked to your desired doneness.

    Toast the Buns

    While the patties are finishing, slice the burger buns in half. In another skillet, toast the buns cut-side down until golden brown, about 1-2 minutes.

    Prepare the Smash Sauce

    In a small bowl, mix together the mayonnaise, ketchup, and yellow mustard to create the smash sauce.

    Assemble the Burgers

    Spread the smash sauce on the bottom half of each toasted bun. Place the cooked patties on top, followed by a generous helping of caramelized onions and a few bread and butter pickles. Top with the other half of the bun.

    Serve the burgers hot with your favorite sides and enjoy!
