Prepare the Shrimp
In a large mixing bowl, combine shrimp with olive oil, cayenne pepper, and salt. Toss well to coat the shrimp evenly. Let marinate for 15 minutes.

Make the Citrus Glaze
In a small saucepan over medium heat, combine fresh orange juice, fresh lime juice, sugar, and Colman's mustard powder. Stir until the sugar dissolves, then bring to a simmer. Cook for about 5 minutes or until the sauce thickens slightly. Remove from heat.

Cook the Shrimp
Heat a large skillet over medium-high heat. Add the marinated shrimp and cook for 2-3 minutes on each side or until they turn pink and opaque.

Glaze the Shrimp
Once the shrimp are cooked, pour the citrus glaze over them in the skillet. Toss to coat the shrimp in the glaze and cook for an additional minute to heat through.

Serve
Serve the glazed shrimp over a bed of cooked wild rice, and garnish with chopped Marcona almonds and fresh parsley.
