Steak Preparation

Prepare the Steak
Season the ribeye steaks with salt and black pepper on both sides. Allow them to sit at room temperature for about 30 minutes before cooking.

Cut the Potatoes
Peel the russet potatoes and cut them into thin strips to resemble fries.

Heat the Oil
In a deep pot, heat vegetable oil to 350°F (175°C).

Fry the Potatoes
Fry the potato strips in batches, cooking for about 5-7 minutes or until golden brown. Use a slotted spoon to remove fries and drain on paper towels. Sprinkle with salt.

Prepare the Au Poivre Sauce
In a saucepan, combine heavy cream, crushed black peppercorns, and white wine vinegar. Simmer until thickened, stirring occasionally.

Make the Béarnaise Sauce
In a separate pot, combine chopped shallots, white wine vinegar, and tarragon. Simmer until reduced. Whisk in egg yolks and heat gently until thickened, then whisk in melted butter.

In a small saucepan, melt cream and stir in crumbled blue cheese until fully combined and smooth.
