Method

For the Sole

    Prep the Sole

    Season the sole fillets with salt and pepper on both sides. Dredge each fillet in flour, shaking off the excess.

    Brown the Butter

    In a large skillet, melt the unsalted butter over medium heat. Allow it to cook until it turns golden brown and has a nutty aroma.

    Sear the Sole

    Add the floured sole fillets to the skillet. Cook for about 3-4 minutes on each side until golden brown and cooked through.

    Finish with Lemon and Herbs

    Drizzle the lemon juice over the cooked fillets and sprinkle the chopped parsley and chives on top. Remove from heat.

For the Pommes Purée

    Boil the Potatoes

    Peel and cut the Yukon Gold potatoes into chunks. Place them in a large pot of salted water, bring to a boil, and cook until tender, about 15-20 minutes.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add the unsalted butter and heavy cream. Mash until smooth and creamy. Season with salt and pepper to taste.

For the Carrot Lyonnaise

    Sauté the Carrots and Shallots

    In a separate skillet, melt the butter over medium heat. Add the minced shallots and sauté for 2 minutes until translucent.

    Add Carrots

    Add the julienned carrots to the skillet. Season with salt and pepper. Cook for about 5-7 minutes, stirring occasionally, until the carrots are tender and slightly caramelized.
