For the New York Strip

Prepare the Steak
Remove the New York strip steak from the refrigerator and let it rest at room temperature for about 30 minutes. This allows the meat to cook more evenly.

Crush the Peppercorns
Using a mortar and pestle or a rolling pin, crush the black peppercorns until they are coarsely ground.

Rest the Steak
Once cooked to your liking, remove the steak from the skillet and let it rest on a cutting board for 5 minutes before slicing.
For the Django Potatoes

Prepare the Beans
Trim the ends of the haricots verts and rinse under cold water.

Blanch the Beans
Bring a pot of salted water to a boil. Add the haricots verts and cook for 2-3 minutes until bright green and tender-crisp. Drain and plunge into ice water to stop cooking.

Add the Brandy
Carefully add the brandy or cognac to the skillet, scraping the bottom to deglaze and add flavor.

Make the Sauce
Stir in the heavy cream and crushed black peppercorns. Simmer for 5-7 minutes until the sauce thickens slightly. Season with salt to taste.
