Mussels Preparation

Clean the Mussels
Rinse the mussels under cold running water to remove any sand or debris. Discard any mussels that are open and do not close when tapped.

Add Beer and Bay Leaves
Pour in the Belgian beer and add the bay leaves. Bring the mixture to a gentle simmer.

Steam the Mussels
Add the cleaned mussels to the pot. Cover and steam for about 5-7 minutes or until all mussels have opened. Discard any mussels that remain closed.

Finish with Lemon and Parsley
Remove from heat and stir in the lemon juice, chopped parsley, salt, and black pepper to taste.

Heat Oil
In a large heavy-bottomed pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Carefully add the potato strips in batches to the hot oil. Fry for about 4-5 minutes until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Season the Fries
Sprinkle with salt while still hot, to taste.
