Method

Mussels Preparation

  1. 1

    Clean the Mussels

Rinse the mussels under cold running water to remove any sand or debris. Discard any mussels that are open and do not close when tapped.

  2. 2

    Sauté Aromatics

In a large pot, melt the butter over medium heat. Add the minced garlic and diced shallots, and sauté for about 3-4 minutes until fragrant and softened.

  3. 3

    Add Beer and Bay Leaves

Pour in the Belgian beer and add the bay leaves. Bring the mixture to a gentle simmer.

  4. 4

    Steam the Mussels

Add the cleaned mussels to the pot. Cover and steam for about 5-7 minutes or until all mussels have opened. Discard any mussels that remain closed.

  5. 5

    Finish with Lemon and Parsley

Remove from heat and stir in the lemon juice, chopped parsley, salt, and black pepper to taste.

French Fries Preparation

  1. 6

    Prepare Potatoes

Peel the Russet potatoes and cut them into long strips to form fries. Rinse under cold water to remove excess starch and pat dry with a paper towel.

  2. 7

    Heat Oil

In a large heavy-bottomed pot or deep fryer, heat the vegetable oil to 350°F (175°C).

  3. 8

    Fry the Potatoes

Carefully add the potato strips in batches to the hot oil. Fry for about 4-5 minutes until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

  4. 9

    Season the Fries

Sprinkle with salt while still hot, to taste.
