Pasta Preparation

Make the Pasta Dough
In a large mixing bowl, combine 2 cups of all-purpose flour and 0.5 tsp of salt. Create a well in the center and add the 2 large eggs and 2 tbs of water. Mix the flour into the eggs gradually until a dough forms.

Knead the Dough
Transfer the dough to a lightly floured surface and knead for about 8-10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for at least 30 minutes.

Roll and Cut the Pasta
After resting, divide the dough into quarters. Roll each piece through a pasta machine or using a rolling pin until thin, then cut into spaghetti shape using a chitarra or knife.
Lobster Sauce Preparation

Cook the Bacon
In a large skillet over medium heat, add 2 tbs of olive oil. Once hot, add 4 slices of bacon and cook until crispy. Remove the bacon and set aside, leaving the fat in the pan.

Sauté Aromatics
In the same skillet, add 2 medium shallots (finely chopped) and 2 cloves of minced garlic. Sauté until translucent, about 3-4 minutes.

Add Tomato Paste and Deglaze
Stir in 2 tbs of tomato paste and cook for an additional 2 minutes. Pour in 0.5 cups of white wine to deglaze the pan, scraping up any brown bits. Let it simmer until reduced by half.

Add Stock and Cream
Add 1 cup of lobster stock and 0.5 cups of heavy cream to the skillet. Bring to a gentle simmer and let it thicken slightly, about 5 minutes.

Add Lobster and Season
Stir in the 6 oz of cold water lobster claw meat, 1 tbs of tarragon, 0.5 tsp of salt, and 0.25 tsp of black pepper. Cook for another 3-4 minutes until the lobster is heated through.
Combine and Serve

Cook the Pasta
In a large pot of salted boiling water, cook the handmade spaghetti for about 2-3 minutes or until al dente. Drain and reserve some pasta water.

Combine Pasta and Sauce
Add the cooked spaghetti directly into the skillet with the lobster sauce. Toss gently to combine, adding reserved pasta water as needed to loosen the sauce.

Garnish and Serve
Serve immediately, garnished with additional fresh tarragon and 0.25 cups of grated Parmesan cheese.
