Prepare the Lobster Filling

Cook the Lobster
If using live lobsters, steam or boil them for about 8-10 minutes per pound, then cool and remove the meat. Alternatively, you can use pre-cooked lobster meat.

Mix Ingredients
In a mixing bowl, combine the lobster meat, black truffle butter, chives, lemon juice, salt, and black pepper. Gently fold the ingredients until the lobster is evenly coated with the mixture.

Chill the Filling
Cover the bowl with plastic wrap and refrigerate the lobster filling for at least 30 minutes to allow the flavors to meld.

Assemble the Lobster Rolls
Once the rolls are toasted, remove them from the skillet. Generously fill each roll with the chilled lobster filling.
