Preparing Brussels Sprouts

Trim and Halve
Trim the ends of the Brussels sprouts and remove any yellow or wilted leaves. Cut each Brussels sprout in half lengthwise.

Season
In a large bowl, toss the halved Brussels sprouts with olive oil, salt, and black pepper until evenly coated.
Frying Brussels Sprouts

Heat Oil
In a large skillet, heat over medium-high heat until hot. Add the Brussels sprouts, cut side down, to the skillet.

Fry
Fry for about 5-7 minutes without stirring, allowing them to caramelize and get crispy. Stir occasionally for another 5 minutes until they are tender and golden brown.

Add Parmesan
Once cooked, remove the skillet from heat and sprinkle the hot Brussels sprouts with grated Parmesan cheese and a drizzle of truffle oil. Toss gently to combine.
Making Harissa Aioli

Mix Ingredients
In a small bowl, combine mayonnaise, harissa paste, minced garlic, and lemon juice. Stir until well blended.

Add salt to taste and mix again. Adjust harissa for spice level if desired.
