Duck Confit Preparation

    Prepare Duck Legs

    In a large bowl, combine the duck legs with salt, crushed garlic, black peppercorns, and fresh thyme. Mix well and cover with plastic wrap. Refrigerate for at least 24 hours.

    Cook Duck Legs

    Preheat the oven to 250°F (120°C). Rinse the duck legs under cold water to remove excess salt. Pat them dry with paper towels. In a large ovenproof pot, melt the duck fat over low heat. Submerge the duck legs in the fat and cook in the oven for 2-3 hours, until the meat is tender and easily pulls away from the bone.

    Crisp Duck Skin

    Once cooked, remove the duck legs from the fat and let them cool. To serve, heat a skillet over medium-high heat and sear the duck legs skin-side down until crispy.

Carrot Purée Preparation

    Cook Carrots

    In a saucepan, add the chopped carrots and cover with water. Bring to a boil and cook until the carrots are tender, about 15-20 minutes. Drain.

    Blend Purée

    In a blender, combine the cooked carrots, unsalted butter, heavy cream, and salt. Blend until smooth and creamy. Adjust seasoning to taste.

Roasted Yukon Gold Potatoes Preparation

    Prepare Potatoes

    Preheat the oven to 425°F (220°C). In a bowl, toss the quartered Yukon Gold potatoes with olive oil, salt, and chopped rosemary.

    Roast Potatoes

    Spread the potatoes on a baking sheet in a single layer. Roast in the preheated oven for 30-35 minutes, or until golden and crispy, tossing halfway through.

Glazed Pearl Onions Preparation

    Sauté Onions

    In a skillet, melt the butter over medium heat. Add the peeled pearl onions and sauté for about 5 minutes until they start to brown.

    Glaze Onions

    Add the brown sugar and vegetable broth to the skillet. Bring to a simmer and cook until the liquid is reduced and the onions are glazed, about 10 minutes. Season with salt to taste.
