Method
To Prepare the Béchamel Sauce
Add Milk
Gradually add the milk to the roux while continuing to whisk to avoid lumps. Cook for about 5 minutes until the sauce is thickened.
Season the Sauce
Stir in salt, black pepper, and a pinch of nutmeg. Remove from heat and set aside.
To Assemble the Sandwich
Spread Mustard
Spread 1 tablespoon of Dijon mustard on one side of each slice of country bread.
Layer Ingredients
On two slices of bread, layer the sliced ham and Swiss cheese. Top with the other two slices of bread, mustard side down.
Butter the Bread
Spread butter on the outside of both sides of the assembled sandwiches.
To Cook the Sandwich
To Prepare the Fried Egg
Fry the Eggs
In another skillet, melt 1 tablespoon of butter over medium heat. Crack the eggs into the skillet and cook them sunny-side up or to your desired doneness, about 3-4 minutes.
To Serve
Assemble the Dish
Place the grilled sandwich on a plate, top with béchamel sauce, and then add a fried egg on top. Serve immediately.
