Method

To Prepare the Béchamel Sauce

1

Make the Roux

In a saucepan over medium heat, melt 2 tablespoons of butter. Once melted, whisk in the flour and cook for about 2 minutes until the mixture is bubbly and golden, stirring constantly.

2

Add Milk

Gradually add the milk to the roux while continuing to whisk to avoid lumps. Cook for about 5 minutes until the sauce is thickened.

3

Season the Sauce

Stir in salt, black pepper, and a pinch of nutmeg. Remove from heat and set aside.

To Assemble the Sandwich

4

Spread Mustard

Spread 1 tablespoon of Dijon mustard on one side of each slice of country bread.

5

Layer Ingredients

On two slices of bread, layer the sliced ham and Swiss cheese. Top with the other two slices of bread, mustard side down.

6

Butter the Bread

Spread butter on the outside of both sides of the assembled sandwiches.

To Cook the Sandwich

7

Grill the Sandwich

In a skillet over medium heat, grill the sandwich for about 3-4 minutes per side until golden brown and the cheese has melted.

To Prepare the Fried Egg

8

Fry the Eggs

In another skillet, melt 1 tablespoon of butter over medium heat. Crack the eggs into the skillet and cook them sunny-side up or to your desired doneness, about 3-4 minutes.

To Serve

9

Assemble the Dish

Place the grilled sandwich on a plate, top with béchamel sauce, and then add a fried egg on top. Serve immediately.
