Season Chicken
Pat chicken breasts dry with paper towels and season with salt and black pepper on both sides.
Cooking

Cook Lardons
In a large Dutch oven, heat olive oil over medium heat. Add the lardons and cook until crispy, about 5-7 minutes. Remove and set aside.

Sear Chicken
In the same pot, add the seasoned chicken breasts and sear until golden brown on both sides, about 6-8 minutes per side. Remove and set aside.

Add Wine and Broth
Pour in the Burgundy wine and chicken broth, scraping any brown bits from the bottom of the pot. Bring to a simmer.

Plate the Dish
Serve the coq au vin hot, garnished with additional fresh thyme if desired. Enjoy!
