Method

Preparing the Salad Base

  1. 1

    Prepare the Mixed Greens

In a large salad bowl, add the mixed greens. Rinse and dry them thoroughly using a salad spinner or paper towels.

  2. 2

    Chop the Tomato

Dice the medium tomato into bite-sized pieces and add them to the salad bowl with the mixed greens.

Cooking Toppings

  1. 3

    Cook the Bacon

In a skillet over medium heat, cook the bacon slices until crispy, about 5-7 minutes. Remove from skillet and drain on paper towels. Once cooled, chop into small pieces.

  2. 4

    Prepare the Manchego

Using a vegetable peeler or a cheese slicer, shave the Manchego cheese into thin strips. Set aside.

Making Croutons

  1. 5

    Prepare the Bread

Cut the bread slices into cubes of about 1 inch.

  2. 6

    Cook the Croutons

In the same skillet used for the bacon, melt the duck fat over medium heat. Add the bread cubes, salt, and pepper. Toss to coat and cook until golden and crispy, about 5-7 minutes. Remove from heat and set aside.

Making the Dressing

  1. 7

    Prepare the Dressing Ingredients

In a small bowl, mash the garlic and anchovy fillets together to form a paste.

  2. 8

    Combine Dressing Ingredients

In a mixing bowl, whisk together the garlic-anchovy paste, Dijon mustard, lemon juice, and olive oil until well combined. Stir in the grated Parmesan cheese and season with salt and pepper to taste.

Assembling the Salad

  1. 9

    Combine All Ingredients

In the large bowl with mixed greens, add the diced tomato, cooked bacon pieces, shaved Manchego, and duck fat croutons.

  2. 10

    Dress the Salad

Drizzle the Caesar dressing over the salad ingredients and toss gently to combine all ingredients evenly.

  3. 11

    Serve

Serve the Caesar salad immediately, garnished with additional Parmesan cheese if desired.
