Beef Bourguignon Preparation

    Sear the Beef

    In a large Dutch oven, cook the lardons over medium heat until crispy. Remove and set aside, leaving the fat in the pot. Season the beef short ribs with salt and black pepper, then sear in the Dutch oven until browned on all sides. Remove and set aside.

    Sauté Vegetables

    In the same pot, add the pearl onions, carrots, and mushrooms. Cook for about 5-7 minutes until they begin to soften. Remove and set aside with the beef.

    Deglaze the Pot

    Pour in the red wine, scraping the bottom to release any browned bits. Let it simmer for 5 minutes.

    Combine Ingredients

    Return the beef and vegetables to the pot. Add beef stock, thyme, and bay leaves. Bring to a simmer.

    Braise

    Cover the pot and reduce heat to low. Let braise for 2-3 hours until the beef is fork-tender.

Pommes Purée Preparation

    Boil Potatoes

    Peel and cut the Yukon Gold potatoes into even chunks. Place them in a large pot of salted water and bring to a boil. Cook until fork-tender, about 15-20 minutes.

    Mash Potatoes

    Drain the potatoes and return them to the pot. Add the unsalted butter and heavy cream. Mash until smooth and creamy. Season with salt to taste.
