Prepare the Chicken
In a mixing bowl, combine flour, cornstarch, baking powder, salt, pepper, and paprika. In another bowl, whisk together buttermilk and eggs. Dip each piece of chicken in the buttermilk mixture, then dredge in the flour mixture until fully coated.

Fry the Chicken
In a large skillet or deep fryer, heat vegetable oil to 350°F (175°C). Fry the chicken pieces in batches until golden brown and cooked through, about 8-10 minutes per side. Remove and drain on paper towels.

Make the Waffles
Prepare the waffle batter according to the package instructions or use a homemade recipe. If making homemade waffles, combine all waffle ingredients in a bowl and mix until smooth. Preheat the waffle iron and cook the waffles until golden brown.

Place a waffle on a plate, top with a piece of fried chicken, and drizzle with NH maple syrup. Serve immediately.
