Prepare the Plantains
Peel the green plantains and cut them into thick slices about 1-2 inches long.

Fry the Plantains
Heat olive oil in a large skillet over medium heat. Fry the plantain slices until they are golden brown, about 4-5 minutes on each side. Remove from oil and drain on paper towels.

In a mortar and pestle or a bowl, crush the garlic cloves with a pinch of salt until it forms a paste.

In the same mortar, add the fried plantains, chicken bouillon cubes, black pepper, and the pork cracklings. Mash everything together until fully combined and a chunky paste forms.

Using your hands, shape the mashed mixture into small balls or mound shapes.
