Prepare the Chicken
Begin by preheating your oven to 200°C (400°F). While the oven is heating, season the chicken breasts with salt and black pepper on both sides.
Sauté the Garlic
In a large skillet, heat the olive oil over medium heat. Add the minced garlic cloves and sauté for 1-2 minutes until fragrant but not burnt.
Cook the Chicken
Add the seasoned chicken breasts to the skillet with the sautéed garlic. Cook for 5-7 minutes on each side until golden brown.
Add Flavorings
Once the chicken is browned, add the fresh thyme and lemon juice to the skillet. Stir to combine and allow the chicken to simmer for another 2 minutes.
Prepare Vegetables
While the chicken is cooking, rinse the asparagus and cherry tomatoes. Toss them with a pinch of salt and a drizzle of olive oil.
Assemble and Bake
Transfer the chicken breasts to a baking dish and surround them with the prepared asparagus and cherry tomatoes. Sprinkle the grated Parmesan cheese over the top.
Bake
Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 75°C (165°F) and the vegetables are tender.
Serve
Once done, remove from the oven and let it rest for 5 minutes before serving. Plate the chicken with the roasted vegetables and enjoy your meal!
