Salted Caramel

Sugared Pecans

Chocolate Glaze

Pecan Praline Ice Cream

Method

Salted Caramel

  1. 1

    Make the Salted Caramel

In a medium saucepan over medium heat, add the granulated sugar and stir continuously until it melts and turns a deep amber color.

  2. 2

    Add Butter

Once the sugar is melted, carefully add the unsalted butter and continue stirring until fully combined.

  3. 3

    Incorporate Cream and Salt

Slowly pour in the heavy cream while stirring, and then add the sea salt. Stir until smooth and remove from heat.

Sugared Pecans

  1. 4

    Prepare the Pecans

In a skillet over medium heat, combine the pecans, granulated sugar, ground cinnamon, and a pinch of salt.

  2. 5

    Cook the Mixture

Stir constantly until the sugar melts and coats the pecans, about 5-7 minutes. Transfer to parchment paper to cool.

Chocolate Glaze

  1. 6

    Melt the Chocolate

In a small saucepan over low heat, combine the semi-sweet chocolate chips and heavy cream. Stir until melted and smooth.

  2. 7

    Cool Slightly

Remove from heat and let cool slightly before using.

Assembling the Drunken Turtle

  1. 8

    Layer the Components

On a serving plate, drizzle some salted caramel, then add a scoop of pecan praline ice cream, followed by a sprinkle of sugared pecans.

  2. 9

    Finish with Chocolate Glaze

Drizzle the chocolate glaze over the top and finish with additional salted caramel if desired.
